Peach Crumble Scones

These tender, buttery scones are filled with juicy peaches and topped with a sweet crumble and vanilla glaze. With a soft interior, lightly crisp edges, and layers of warm flavor, they’re the perfect balance between a classic scone and a fruit crumble dessert.

Ingredients

Scone

• 3 cups all-purpose flour
• 1 Tbsp baking powder
• ½ tsp kosher salt
• 2 Tbsp brown sugar
• 12 Tbsp cold butter, grated
• 1 cup buttermilk
• 1 egg
• 1 tsp vanilla extract
• 1–1½ cups diced peaches (fresh or frozen)

Icing

• ¼ cup butter, melted
• 1 tsp vanilla extract
• 2 cups powdered sugar
• 2–4 Tbsp milk (to thin)
• Pinch of salt

Crumble

• ¼ cup butter, melted
• ½ cup flour
• 3 Tbsp brown sugar
• Pinch of salt

Instructions

1. Preheat the oven to 400°F and line a baking sheet with parchment paper.
2. In a large bowl, mix together the flour, baking powder, salt, and brown sugar.
3. Add the cold grated butter and work it into the flour mixture with your fingers until crumbly.
4. Add the buttermilk, egg, vanilla extract, and diced peaches. Mix just until combined, being careful not to overmix.
5. Transfer the dough onto the prepared baking sheet and shape it into an 8–10 inch circle. Slice into 8 wedges, like a pizza.
6. In a separate bowl, mix together the crumble ingredients and sprinkle evenly over the scones.
7. Bake for 20–22 minutes, until golden brown on the edges and cooked through in the center.
8. Remove from the oven and let cool.
9. In a bowl, whisk together the icing ingredients until smooth. Drizzle over the cooled scones.
10. Allow the icing to set before serving or storing. Enjoy!
