Studded with melty chocolate chips and gooey mini marshmallows, and finished with a hint of graham cracker crunch, they capture all the nostalgic flavors of a campfire treat in a bakery-style cookie.

Ingredients

• 1 c browned butter, cooled for 30 min
• 1 c brown sugar
• 1⁄2 c cane sugar
• 2 eggs
• 1 tsp vanilla extract
• 4 Tbsp hot brewed coffee
• 2 ¾ c all purpose flour (or 00 Italian flour)
• 1 tsp baking soda
• ¾ c cocoa powder
• 1 tsp salt
• 10 oz chocolate chips
• 10 oz bag mini marshmallows
• 1 c crushed graham crackers

Instructions

1. BROWNED BUTTER: Place 1 cup of butter in a saucepan over medium heat. Stir every 30 seconds as it melts and begins to foam. Continue cooking until it turns a rich golden brown and releases a nutty aroma, about 5–6 minutes. Remove from heat, pour into a metal mixing bowl, and let cool for 30 min.
2. Once cooled, add brown sugar and cane sugar to the butter and whisk for 2 minutes.
3. Add the eggs, vanilla and hot coffee, then whisk again for 2–3 minutes.
4. Add the remaining ingredients (saving some crushed graham crackers for topping if desired) and mix until fully incorporated.
5. Scoop the dough into ¼-cup balls and place them in a large Tupperware with a lid. Refrigerate for at least 24 hours to chill—this step is essential.
6. When ready to bake, preheat the oven to 375°F (190°C). Arrange cookies a few inches apart on a baking sheet straight from the fridge. Roll tops into extra graham crackers if desired.
7. Bake for 16–18 minutes, until cookies are just set but still slightly soft in the center.
8. Let cookies cool, then enjoy!
