This warm, gooey cinnamon roll casserole takes everything you love about classic cinnamon rolls and turns it into an easy, shareable bake. Soft, fluffy dough is layered with buttery cinnamon sugar and finished with a sweet vanilla coffee icing that melts into every bite—perfect for cozy mornings or feeding a crowd.

Ingredients

Dough

• 2 cups milk
• ½ cup butter
• ½ cup sugar
• ½ tbsp yeast
• 6 cups Italian 00 flour (or 7 cups einkorn flour)
• ½ tsp baking soda
• 1 tsp baking powder
• 1 tsp salt
• 1 cup cane sugar
• ¼ cup cinnamon
• ½ cup butter, melted

Icing

• 16 oz powdered sugar
• 1 tsp vanilla extract
• 1 tbsp hot brewed coffee
• 2 tbsp melted butter
• 3–4 tbsp milk

Instructions

1. In a large pot, combine 2 cups milk, ½ cup butter, and ½ cup sugar. Warm over medium-low heat. Remove from heat, stir, and let cool until warm to the touch.
2. Stir in ½ tbsp yeast and let it foam for 10 minutes.
3. Add 4 cups of flour (if using all-purpose or Italian 00) or 5 cups (if using Einkorn flour). Mix well, cover, and let rise for 1 hour.
4. While the dough rises, prepare the icing: mix all icing ingredients in a bowl, cover, and refrigerate until ready. Also, combine 1 cup cane sugar with ¼ cup cinnamon in a small bowl and set aside.
5. Once the dough has risen, add the remaining flour, baking powder, baking soda, and salt. Mix until incorporated. The dough should be soft but not overly sticky. If needed, add extra flour 1 tablespoon at a time until smooth and manageable.
6. Divide the dough into equal portions, roll each up, and place in a greased 9×13-inch dish.
7. Melt ½ cup butter and drizzle over the dough, then sprinkle generously with the cinnamon-sugar mixture. Cover with a towel and let rise in a warm spot for 30 minutes.
8. Preheat the oven to 350°F (175°C) while the dough rises.
9. Uncover the dish and bake for 22–25 minutes, until golden brown.
10. Remove from the oven, ice immediately, and allow to cool slightly before serving.
