These classic snickerdoodles are soft, chewy, and perfectly spiced with a cinnamon-sugar coating. Made with rich tallow for a tender texture and subtle depth of flavor, they have lightly crisp edges and soft centers—just the way a perfect snickerdoodle should be.

Ingredients

Dough

• 1 cup tallow
• 1½ cups cane sugar
• 2 eggs
• 3 cups einkorn flour (or 2½ cups all-purpose flour)
• 1 tsp salt
• 1½ tsp baking powder
• ¾ tsp baking soda

Coating

• 3 Tbsp cinnamon
• ¼ cup cane sugar

Instructions

1. Preheat oven to 375°F.
2. In a mixing bowl, cream together the tallow and sugar until well combined. Add the eggs and mix again until smooth.
3. Add the flour, salt, baking powder, and baking soda. Mix until a dough forms.
4. In a small bowl, combine the cinnamon and sugar for the coating.
5. Scoop about 2 tablespoons of dough and roll into balls. Coat each ball in the cinnamon sugar mixture.
6. Place on a baking sheet, spacing evenly apart.
7. Bake for about 10 minutes, until the edges are set but the centers remain soft. Do not overbake.
8. Let cool slightly, then enjoy!
