These indulgent, s’mores-inspired cookies are loaded with melty chocolate, crunchy graham crackers, and a gooey marshmallow center. With crisp edges and soft, chewy middles, they capture all the nostalgic flavors of a campfire treat in bakery-style cookie form.

Ingredients

• 1 cup butter, softened
• 1½ cups cane sugar
• 2 eggs
• 2 tsp vanilla extract
• 3 cups all-purpose flour
• 1 tsp salt
• 1 tsp baking soda
• 10 oz chocolate chips
• 1½ packages graham crackers, crushed (divided)
• 1 container marshmallow fluff

Instructions

1. In a mixing bowl, cream the butter and sugar together for 5 minutes until light and fluffy.
2. Add the eggs and vanilla extract, then beat for another 2 minutes until smooth.
3. Add the flour, salt, baking soda, chocolate chips, and about 1 package of crushed graham crackers. Mix until just combined.
4. Scoop the dough into your desired size (about ¼ cup for large cookies) and roll into balls.
5. Place the dough into an airtight container and refrigerate for at least 24 hours.
6. When ready to bake, preheat oven to 375°F and line a baking sheet with parchment paper.
7. Place cookies a few inches apart. Press a small well into the center of each dough ball, creating slightly raised edges.
8. Fill each center with 1–2 tablespoons of marshmallow fluff, then sprinkle with the remaining crushed graham crackers.
9. Bake for about 16–18 minutes, until golden brown and set around the edges.
10. Allow to cool before serving so the centers can set slightly.
