Nutty browned butter deepens every bite while a generous blend of pumpkin spice weaves through a hearty oat-studded dough that bakes up perfectly golden and chewy. Simple ingredients, big flavor, and the kind of cookie that disappears fast.

Ingredients

• 1 c browned butter, cooled for 30 min
• 1 c brown sugar
• ½ c cane sugar
• 2 eggs
• 1 tsp vanilla extract
• 1 c old fashioned oats
• 2 c all purpose flour
• 1 tsp salt
• 1 tsp baking soda
• 1 Tbsp pumpkin spice blend

Instructions

1. BROWNED BUTTER: Place 1 cup of butter in a saucepan over medium heat. Stir every 30 seconds as it melts and begins to foam. Continue cooking until it turns a rich golden brown and releases a nutty aroma, about 5–6 minutes. Remove from heat, pour into a metal mixing bowl, and let cool for 30 min.
2. Once the butter has cooled, add brown sugar and cane sugar to a mixing bowl. Cream together with a hand or stand mixer for 3–5 minutes.
3. Add the eggs and vanilla, then mix again for 2–3 minutes.
4. Add the remaining ingredients and mix on low until everything is evenly incorporated.
5. Scoop the dough into balls (2 Tbsp for regular cookies or ¼ cup for large cookies) and place them on a baking sheet.
6. Cover the dough with plastic wrap or a large Tupperware lid and refrigerate for 24 to 72 hours.
7. Preheat the oven to 375°F. Arrange cookies 1–2 inches apart on a baking sheet.
8. Bake for 16–18 minutes (less for regular-size cookies) until cookies are just set but still slightly soft in the center.
9. Let cookies cool for about 20 minutes, then enjoy!
