Homemade Peeps

These homemade Peeps are soft, fluffy marshmallow treats with a light vanilla flavor and a customizable coating of colored coconut, sprinkles, or sanding sugar. Fun to make and even more fun to decorate, they’re a festive, nostalgic treat perfect for holidays or gifting.

Ingredients

• 1 cup cold water (divided)
• 6 Tbsp beef gelatin
• 1 cup cane sugar
• 1 tsp vanilla extract
• Pinch of salt
• Optional: ½ tsp coconut or almond extract

Optional Coatings

• Coconut flakes
• Food coloring
• Small sprinkles
• Sanding sugar

Instructions

1. In a mixer bowl, add ½ cup cold water and sprinkle in the gelatin. Let it sit until fully bloomed and firm.
2. In a saucepan, combine ½ cup water and sugar. Heat over medium, stirring occasionally. Bring to a boil and cook until it reaches 235°F (soft-ball stage). *If no thermometer: cook until reduced by about half.
3. Carefully pour the hot sugar syrup over the bloomed gelatin. Add salt and extracts. Mix on low to combine, then increase to high speed. Whip for 10–15 minutes, until thick and holds its shape. *Do not overmix.*
4. Immediately pour into a greased or lined 9×13-inch pan or rimmed baking sheet. Spread quickly and evenly. Let set for 3–4 hours.
5. Prepare Coating: Mix coconut flakes with food coloring until evenly coated, or prepare sprinkles/sugar.
6. Use a bunny cutter (or knife for squares). Dip cutter in water between cuts to prevent sticking. Place shapes on parchment paper.
7. Lightly dip each marshmallow in water. Roll or sprinkle with coconut or desired topping.
8. Let coated Peeps sit for about 1 hour to set.
