This decadent dessert combines two classics into one irresistible treat—a rich, fudgy brownie base topped with soft, chewy chocolate chip cookie dough. Made with nutty browned butter and studded with melty chocolate chips throughout, these brookies are indulgent, gooey, and perfect for sharing (or not).

Ingredients

Brownie Base

• 1 c browned butter, cooled for 30 min
• 2 eggs
• 2 tsp vanilla extract
• 1 cup cane sugar
• ¼ cup hot brewed coffee
• 2 1⁄2 c all purpose flour
• 1 cup cocoa powder
• 1 tsp baking soda
• 1 tsp salt
• 1 cup chocolate chips

Cookie Dough

• 1 cup browned butter
• 2 cups cane sugar
• 2 eggs
• 2 tsp vanilla extract
• 2 ½ – 2 ¾ cups all-purpose flour
• 1 tsp salt
• 1 tsp baking soda
• 2 c chocolate chips

Instructions

Brownie Base

1. BROWNED BUTTER: Place 1 cup of butter in a saucepan over medium heat. Stir every 30 seconds as it melts and begins to foam. Continue cooking until it turns a rich golden brown and releases a nutty aroma, about 5–6 minutes. Remove from heat, pour into a heatproof bowl, and let cool.
2. In a large bowl, whisk together browned butter, eggs, vanilla extract, cane sugar, cocoa powder, and hot brewed coffee.
3. Add flour, baking soda, salt, and chocolate chips; mix until just combined.
4. Spread mixture evenly into a 10-inch skillet or an 8x8 pan, pressing to smooth.

Cookie Dough

1. In a mixer, combine browned butter and cane sugar; whisk for 1–2 minutes.
2. Add eggs and vanilla extract; whisk until smooth.
3. Add flour, salt, baking soda, and chocolate chips; mix until fully incorporated.
4. Scoop dough by 1 tbsp portions and press onto the top of the brownie batter.
5. Bake for 35–42 minutes, until slightly jiggly but mostly set (oven times may vary).
6. Cool, slice, and enjoy!
